 :: Mango and Coconut Ice Cream ::

 
Ingredients

  • 2 medium sized Mangoes (Ripe)
  • 2 tsps Lemon juice
  • 1/2 cup Sugar
  • 1/4 tsp Salt
  • 2 tbsps Coconut (scraped)
  • 2 Egg whites (beaten to soft peaks)
  • 1/2 cup Cream (heavy)

Directions

Peel the mangoes and make a puree of the pulp. Keep aside. Beat egg whites with a little lemon juice and sugar. Beat the cream with the remaining sugar. Lightly roast the scraped coconut and cool. Add the egg whites to the mango puree. Mix. Then add the cream mixture and mix well. Add roasted scraped coconut and mix. Pour into a lidded bowl and place in the freezer until half-frozen. Transfer the mixture to another bowl. Add the egg whites and beat until smooth. Fold in the heavy cream and mix well. Freeze this mixture for 3 hours. Remove from the freezer and beat again till smooth. Return to the freezer until well frozen.
